Learning to bake is the gateway to so much learning in the kitchen. Whilst most adults will not look at a recipe when cooking a main meal when it comes to baking, precision and accuracy are key. With the DofE cookery courses students will be taught the three methods of cake making and learn lots of DofE top tips to create successful outcomes.
Scones
Skills - rubbing in, portioning, weighing
Many people struggle to achieve soft, well risen scones so in this lesson students will learn all our top tips to create a bake suitable for any afternoon tea. Whilst most people buy butter we also include a recipe and video showing students how to make their own, but this is entirely optional.
Shortbread
Skills - weighing, rubbing in, rolling and shaping
This Mary Berry inspired recipe enables students to create buttery shortbread which shows transferable skills to lots of other biscuit recipes. In this recipe we show you how to make delicious shortbread and then how to make a piping bag to fill with melted chocolate to decorate.
Welsh Cakes
Skills - weighing, rubbing in, use of hob and heat management
Remarkably many students have never tried a Welsh cake but are very surprised at how much they like them. Traditionally they have raisins in but this can be substituted for chocolate drops. The skill of heat management and portioning really comes to the forefront of this tasty recipe.
Lemon Drizzle Muffins

A wonderful Felicity Cloake inspired recipe, their tangy lemony flavour is quite simply delicious. Students will make them using all in one method of cake making and also learn the importance of correct portioning and oven temp.
Swiss Roll
Skills – weighing, whisking method of cake making, rolling, oven management
This whisked sponge is fat free and for success students have to work quickly and efficiently. The cake can be adapted to have chocolate and also can be more decorated, some students have made it into a yule log
Banana Cakes

A lock down favourite so keep your old bananas! A moist light cake, made with the all in one method of cake making with the optional addition of chocolate chips or dried fruit
Flapjacks
Skills – weighing, melting method
A perfect recipe for the Dofe students to make a long lasting energy snack using the melting method. Although this recipe just includes oats, seeds and nuts can be added to increase nutritional value.
White Chocolate and pistachio cookies

Use this recipe to learn how create beautifully shaped cookies without a cookie cutter. We added pistachios, they look so pretty against the straw coloured biscuit (students can change as they wish). Skills include rubbing in, oven management and precision portioning.
White bread
Skills – kneading, making a yeasted dough, shaping.
As an award winning baker Ruth loves passing on all her knowledge to make a lovely little white loaf. Students will leave knowing how to knead, prove, shape and recognise when a loaf is ready. Also key is understanding the role of yeast, salt and bread flour to make a perfect loaf.
Pizza
Skills – Dough making, shaping and time and heat management
Using the skills gained making the little white loaf students will learn how to create a hand rolled pizza
Victoria sponge cake
Skills – weighing, creaming method of cake making, lining a tin, oven management.
