I love Si King and Dave Myers (AKA The Hairy Bikers’), this lovely recipe is from their latest book, Veggie Feasts which my lovely friend Hilary gave me for my birthday this year!

Ingredients
150ml whole milk
1tbsp of marmite
300g self raising flour, sieved
1 tsp baking powder
1/2 tsp salt
85g butter, cubed and chilled
150g hard cheese, eg cheddar, grated
1 tsp mustard powder – optional, it is a flavour enhancer
1 tbsp caster sugar, again optional
Method
- Gently heat milk until it is tepid – not boiling
- Stir in marmite, make sure it has all dissolved.
- Leave to cook – ideally chill.
- Mix flour, baking powder and salt in a large bowl.
- Add butter and rub in, it should resemble breadcrumbs.
- Add cheese, mustard powder and sugar.
- Chill if possible – this lets the gluten relax.
- Pre-heat the oven 220C/Fan 200C/Gas 7
- Reserve one TBSP of the milk mixture
- Pour the rest into the dry ingredients and mix together quickly with a knife.
- Gently bring together, but don’t overwork.
- Turn onto a floured surface and pat down till roughly 3cm thick.
- Using a 6cm cutter, dip into flour and then push into the dough- straight down.
- Put on a baking tray with baking paper.
- Repeat, squashing remaining dough together.
- You should be able to make 8/9.
- Brush the tops with remaining milk.
- Bake for 12-15 mins.
- Serve warm.
