Baked Apples with Mincemeat serves 4
This is a lovely recipe I included in my Dec round up of using leftovers for Your Magazine. So simple if you want to get one of your five a day and use up leftovers! For the filling you can add walnuts, cherries, raisin even little balls of rolled up marzipan, I know that Bramley are good apples to use but I use any type, regardless of the texture after cooking they taste delicious. Delicious served with cream, brandy butter or even custard. The point of scoring the apples round the middle is that otherwise they have the tendency to burst.
4 apples, cored and scored round the middle
150g-200g (5oz-7oz) mincemeat
200 ml (7floz) water
Pre heat the oven to 190C/Fan 170C/Gas Mark 5
